Mmmmm..... Delicious!

It's that time of year when the leaves start to change and there is a chill in the air. Which means it's that time of year for SOUP! I love to have a hot bowl of soup and and just enjoy the beautiful scenery outside. Here is a quick and easy, yet very filling tortilla soup recipe.

Tortilla Soup

1 yellow onion
1 small bunch of cilantro
1 tsp minced garlic
1 can diced or stewed tomatoes
1/2 tsp cumin
1 tsp crushed red pepper flakes
4 cups chicken broth
3-4 chicken breast cooked and shredded

Saute onions, cilantro and garlic in some olive oil for a few min. then puree mixture with the canned tomatoes in a blender. Return the mixture to the sauce pan and add the cumin. Simmer 5-6 minutes until sauce thickens. In a seperate pot bring the chicken broth to boil. Then add the red pepper and chicken and the tomatoe mixture to the broth and simmer for 15-20 minutes. Serve over tortilla chips and sprinkle cheese on top. Mmmmm (I like to add cottage cheese too. I feel like I am eating really healthy, try it it's good!)
